Meatless Monday: Veggie Stir Fry on the Cheap!
Meatless Monday – one day a week, cut out meat.
Tonight, we’re going to have some wonderful veggie stir fry served on top of some beautifully tasty jasmine rice.
Our friends, Anne and Scott (and kidlets) have moved. Sad day, yes, however, we became the recipients of their pantry clean out, and let me tell you… I don’t think I’ve ever known anyone else to buy jasmine rice in bulk. We have at least 20 pounds of rice in our pantry. Thank you, guys!
The even better part is, this meal is only going to cost us about $5 for the entire family! Imagine if you took your family of 5 out to eat and everyone ordered a drink and veggie stir fry with steamed rice! You’re looking at $50 at least! What a great way to save some money by making this lovely meal at home!
The good news about veggie stir fry is that you can just throw your favorite veggies in a pan, throw in some coconut or peanut oil (olive oil if you’d like!), and stir for about 10 minutes or until all the veggies are tender!

We just love jasmine rice. Whether we use it as a base for a stir fry, Indian food, or (as has been popular lately) a Thai based curry. Let it not be said that cheap food means tasteless.
