Organic Baby Arugula Chips Recipe (Kale Chips Knock Off)
I love Kale Chips. I’ve made them several times, around here, from Rachel’s Recipe at Following in my Shoes.
Andy brought home some organic baby arugula, and I was decided to see if I could make arugula chips, because I LOVE the flavor of arugula! (I’m sure there’s already a recipe out there somewhere…. but I was too lazy to search!)
Ingredients
3 cups of Organic Baby Arugula
1 tsp Olive Oil
Pinch of Salt
Pinch of Pepper (optional)
Pinch of Garlic Powder (optional)
Make sure the ingredients are completely dry. Mix all of the ingredients in a bowl.
I’m using a convection oven set to 450° – Bake. For a conventional oven, I would set it to 350°.
Line your pan with foil (whether using a convection or conventional oven). Spread the arugula on the foil in one layer. This will help it dry out more evenly. It will render down to just about nothing, but it is what it is!
Keep in the oven for about 7 minutes (or more, depending on the heat and what oven you use) or until the arugula looks flat and crispy. Put it on a plate to cool and crisp more.
The next time you make this, you may want to play with the ingredients and flavors to suit your taste! Try other savory spices like paprika or onion!

I’ve never used Arugula in anything. What are other foods that it works good in for flavor? I’m always looking to spice up foods!

Sounds yummy! I’m wondering, though–how can you tell whether your olive oil is safe for heating to 450, though? Is it a specific type?
