If you ask anyone in my house, they’ll tell you that my two favorite soups are tomato soup and corn chowder.  I was so excited to open the box and find a package of Tomato Basil Soup Mix.  I love to make grilled cheese sandwiches and dip them in tomato soup.

This recipe was so easy, all I had to do was add chicken stock, tomato puree, a little brown sugar, and some cream.  Not only did my house smell wonderful, but the soup is so delicious, I had a hard time sharing!  Because the flavors were so rich and sophisticated, I served the soup with a couple of pieces of parmesan herb toast.  It just seemed too classy for plain ol’ grilled cheese.   What’s even more awesome — it was done in 30 minutes!  That’s perfect for us, because we usually only have about an hour to get dinner ready and eaten before we’re out the door!

I give this bowl of soup FIVE stars!  Superb.
