I don't have a recipe for what I'm making for Meatless Monday! We're having a special Valentine's Day Spinach and Zucchini Manicotti! Probably not so good for us, but we're not giving in to the commercialism of that which is Valentine's Day by indulging in overly priced candies or going to dinner!
