Meatless Monday: Grilled Poblano and Corn Salad
Tonight, for Meatless Monday dinner, we're going to be having fabulous build-your-own salad night! For mine, I will have romaine hearts, tomatoes, celery, carrots, grilled corn, and grilled poblano peppers! I will be topping mine with homemade salsa made from tomatoes, onion, garlic, peppers, and whatever else I can find to throw in! I think the corn and poblanos are really going to make for a great salad!
Meatless Monday: Spinach and Zucchini Manicotti
I don't have a recipe for what I'm making for Meatless Monday! We're having a special Valentine's Day Spinach and Zucchini Manicotti! Probably not so good for us, but we're not giving in to the commercialism of that which is Valentine's Day by indulging in overly priced candies or going to dinner! It's got ricotta cheese, cottage cheese, mozarella cheese, with spinach and zuchinni mixed in. It's smothered with a sauce chock full of veg! Happy Meatless Valentine's Day!
Meatless Monday: Pintos and Quinoa
Today, I am not feeling well, so I'm going VERY simple for Meatless Monday! I have already thrown some Pinto Beans in the crock pot, and once Andy starts on his way home, I'll make some quinoa to go with them. I thought about adding some veggies in with the pintos, but I'll just have to see how I'm feeling when the time comes! Have a great Meatless Monday!
Meatless Monday: Veggie Stir Fry on the Cheap!
Meatless Monday – one day a week, cut out meat. Tonight, we're going to have some wonderful veggie stir fry served on top of some beautifully tasty jasmine rice. Our friends, Anne and Scott (and kidlets) have moved. Sad day, yes, however, we became the recipients of their pantry clean out, and let me tell I don't think I've ever known anyone else to buy jasmine rice in bulk. Meatless Monday - one day a week, cut out meat. While grocery shopping this weekend, we ran across samples of this Southwest Skillet recipe. It was fabulous, however, for Meatless Monday, we're going to use pinto beans as a replacement for ground turkey. They're in the crock pot now! Meatless Monday for the unskilled and uncreative chefs!
Andy and I have talked about Meatless Monday several times, but we've never buckled down and start having meals without meat on Mondays. Why? Well, there's a lot of times, throughout the week that we'll have meatless meals, so we never really had a need to pick a specific day. Next week, we're going to designate Mondays as meatless.
